Oatmeal Scotchies Cookies

Delicious and chewy oatmeal cookies with a sweet butterscotch twist.

  • 0.5 cup butter softened
  • 3 cup oats quick-cooking
  • 1.5 cup all-purpose flour
  • 1.5 cup butterscotch chips
  • 1 cup brown sugar packed
  • 2 large eggs
  • 1 tsp baking soda

Preparation Steps

  • Preheat your oven to 375°F (190°C).
  • In a medium bowl, cream together softened butter and brown sugar. Add eggs one at a time, mixing well after each.
  • Gradually mix in flour, baking soda, and oats until combined.
  • Stir in butterscotch chips.
  • Drop by rounded spoonfuls onto ungreased baking sheets.
  • Bake for 8-10 minutes, or until golden brown. Let cool on a wire rack.
