Soft, chewy oatmeal bars with rich peanut butter flavor and gooey chocolate chips baked into a satisfying snack or dessert.

  • 226 grams unsalted butter, softened
  • 200 grams granulated sugar
  • 240 grams creamy peanut butter
  • 2 teaspoons pure vanilla extract
  • 200 grams old-fashioned rolled oats
  • 170 grams all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 175 grams semi-sweet chocolate chips

Preparation Steps

  • Preheat oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving overhang for easy removal.
  • In a large bowl, beat together the softened butter, granulated sugar, and peanut butter until smooth and creamy.
  • Beat in the eggs one at a time, then stir in the vanilla extract.
  • In a separate bowl, whisk together the oats, flour, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the chocolate chips.
  • Press the dough evenly into the prepared baking pan.
  • Bake for 25–30 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
  • Cool completely in the pan on a wire rack before cutting into squares.

Notes

These bars stay soft and chewy for up to 5 days when stored in an airtight container at room temperature.
