Instructions
Preparation Steps
Preheat oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving overhang for easy removal.
In a large bowl, beat together the softened butter, granulated sugar, and peanut butter until smooth and creamy.
Beat in the eggs one at a time, then stir in the vanilla extract.
In a separate bowl, whisk together the oats, flour, baking powder, baking soda, and salt.
Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the chocolate chips.
Press the dough evenly into the prepared baking pan.
Bake for 25–30 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
Cool completely in the pan on a wire rack before cutting into squares.
Notes
These bars stay soft and chewy for up to 5 days when stored in an airtight container at room temperature.
