No-Bake Pumpkin Oatmeal Cookies
These no-bake pumpkin oatmeal cookies combine pumpkin, peanut butter, maple syrup, and warm spices in a chewy chilled treat.

Ingredients
- 1/2 cup pumpkin puree plain canned pumpkin
- 1/2 cup creamy peanut butter smooth
- 1/3 cup maple syrup pure maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon fine salt
- 2 1/2 cups old-fashioned rolled oats
Instructions
Line a baking sheet with parchment paper.
Stir pumpkin puree, peanut butter, maple syrup, vanilla, cinnamon, ginger, and salt in a saucepan over medium-low heat until smooth and steaming, about 4 minutes; do not boil.
Remove from the heat and stir in the rolled oats until every oat is coated.
Scoop about 2 tablespoons of mixture for each cookie onto the prepared sheet and flatten slightly.
Chill for at least 1 hour, until the cookies are firm, then serve.
For the cleanest shape, let the mixture cool briefly before scooping.
Store chilled so the cookies hold their texture.
