Preparation Steps
Prepare the crust by mixing graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch pie pan to form an even crust.
In a large mixing bowl, beat the softened cream cheese until smooth. Add powdered sugar and vanilla extract, and mix until well combined.
Gently fold 1 cup of the whipped topping into the cream cheese mixture until just combined.
Spread the cream cheese mixture evenly over the prepared crust.
Decorate the top with a mixture of fresh berries.
Spread the remaining 1 cup of whipped topping over the berries, or pipe decoratively.
Refrigerate the pie for at least 4 hours or until set.
Serve chilled and garnish with additional whipped topping if desired.
Notes
To add more zest, sprinkle some lemon zest over the topping before serving. Keep the pie refrigerated for up to 3 days.
