  • 16 oz Chocolate Sandwich Cookies finely crushed
  • 1 cup Unsalted Butter melted
  • 24 oz Cream Cheese softened
  • 2 cups Powdered Sugar
  • 1 cup Whipping Cream cold
  • 2 cups Mixed Berries fresh or frozen, thawed
  • 0.5 cup Granulated Sugar
  • 1 tbsp Lemon Juice freshly squeezed

Preparation Steps

  • Crush the chocolate sandwich cookies into fine crumbs and mix with melted butter. Press evenly into the base of a springform pan.
  • In a large bowl, beat cream cheese and powdered sugar until smooth. Fold in whipped cream until combined.
  • In a separate saucepan, combine mixed berries, granulated sugar, and lemon juice. Simmer until the mixture thickens slightly, then cool.
  • Spread half of the cream cheese mixture over the cookie crust in the springform pan.
  • Layer the berry mixture over the cream cheese layer.
  • Top with the remaining cream cheese mixture and smooth the top.
  • Chill the cheesecake in the refrigerator for at least 4 hours or until fully set. Serve cold.

Notes

This cheesecake can be made a day in advance and is perfect for summer gatherings. Optional: Garnish with extra berries or a dusting of powdered sugar before serving.
