Instructions
Preparation Steps
Preheat the oven to 325°F (165°C). Line a muffin tin with paper liners.
In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press mixture evenly into the bottom of each muffin liner.
In a large bowl, beat together cream cheese, vanilla extract, sour cream, and lemon juice until smooth.
Add eggs, one at a time, beating on low speed until incorporated.
Divide mixture evenly over the prepared crusts.
Bake in preheated oven for 20-25 minutes or until centers are set.
Cool completely in the pan, then refrigerate for at least 2 hours before serving.
Notes
For extra lemon flavor, garnish with lemon zest.
