Mini Lemon Cheesecakes

Deliciously creamy mini lemon cheesecakes are the perfect individual dessert for any occasion. Easy to make and irresistibly good!

Ingredients

  • 1.5 cups graham cracker crumbs finely crushed
  • 2 tbsp sugar
  • 5 tbsp unsalted butter melted
  • 8 oz cream cheese softened
  • 1 tsp vanilla extract
  • 0.5 cup sour cream
  • 2 tbsp lemon juice freshly squeezed
  • 2 large eggs room temperature

Preparation Steps

  • Preheat the oven to 325°F (165°C). Line a muffin tin with paper liners.
  • In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press mixture evenly into the bottom of each muffin liner.
  • In a large bowl, beat together cream cheese, vanilla extract, sour cream, and lemon juice until smooth.
  • Add eggs, one at a time, beating on low speed until incorporated.
  • Divide mixture evenly over the prepared crusts.
  • Bake in preheated oven for 20-25 minutes or until centers are set.
  • Cool completely in the pan, then refrigerate for at least 2 hours before serving.

Notes

For extra lemon flavor, garnish with lemon zest.
