Mexican Street Corn (Elote)

A vibrant and flavorful Mexican street corn dish, grilled to perfection and coated in a creamy, spicy, and tangy sauce. A perfect side dish or appetizer!

  • 4 ears Corn on the cob
  • 0.5 cup Mayonnaise
  • 0.25 cup Cotija cheese crumbled
  • 2 tablespoons Lime juice fresh
  • 1 teaspoon Chili powder or to taste
  • 0.5 teaspoon Cumin
  • 0.25 cup Cilantro chopped, for garnish
  • 0.5 teaspoon Salt or to taste
  • 0.25 teaspoon Black pepper or to taste

Preparation Steps

  • Preheat your grill to medium-high heat.
  • Grill the corn directly on the grates, turning occasionally, for about 10-15 minutes, or until lightly charred and tender.
  • While the corn is grilling, in a small bowl, whisk together the mayonnaise, lime juice, chili powder, and cumin.

  • Once the corn is grilled, carefully brush it all over with the mayonnaise mixture.

  • Sprinkle generously with crumbled cotija cheese, chopped cilantro, salt, and pepper.

  • Serve immediately.

Notes

For a spicier version, add a pinch of cayenne pepper to the mayonnaise mixture. If you can't find cotija cheese, feta cheese can be used as a substitute.
