Instructions
Preparation Steps
Grill or boil the corn until tender. Let cool slightly.
Cut the kernels off the cob into a bowl.
Add mayonnaise, lime juice, chili powder, and chopped cilantro to the bowl.
Mix gently to combine.
Season with salt and pepper to taste.
Serve topped with crumbled cotija cheese and an extra sprinkle of chili powder.
Notes
This dish can also be made with corn kernels straight from the can or frozen, but grilling adds a lovely smoky flavor.
