Instructions
Preparation Steps
Preheat your oven to 350°F (175°C) and lightly grease a casserole dish.
In a large pan, cook chicken over medium heat until fully cooked and lightly browned, about 10 minutes.
Mix the cooked chicken with enchilada seasoning and a splash of water, letting it simmer for 5 minutes.
Layer half of the corn and avocado cubes at the bottom of the casserole dish.
Spread half of the seasoned chicken over the corn and avocados.
Sprinkle 2 cups of cheese over the chicken.
Repeat the layering process with the remaining ingredients, ending with cheese on top.
Bake uncovered for 20-25 minutes or until the cheese is bubbly and golden.
Allow casserole to cool for 5 minutes before serving. Enjoy with salsa or sour cream.
Notes
For extra flavor, add a layer of sliced jalapeños. Adjust spice level by choosing mild or spicy enchilada mix.
