  • 1.5 lbs chicken breast boneless and skinless
  • 15 oz can of corn drained
  • 2 units ripe avocados cubed
  • 4 cups shredded cheese cheddar or Mexican blend
  • 1 packet enchilada seasoning mix store-bought

Preparation Steps

  • Preheat your oven to 350°F (175°C) and lightly grease a casserole dish.
  • In a large pan, cook chicken over medium heat until fully cooked and lightly browned, about 10 minutes.
  • Mix the cooked chicken with enchilada seasoning and a splash of water, letting it simmer for 5 minutes.
  • Layer half of the corn and avocado cubes at the bottom of the casserole dish.
  • Spread half of the seasoned chicken over the corn and avocados.
  • Sprinkle 2 cups of cheese over the chicken.
  • Repeat the layering process with the remaining ingredients, ending with cheese on top.
  • Bake uncovered for 20-25 minutes or until the cheese is bubbly and golden.
  • Allow casserole to cool for 5 minutes before serving. Enjoy with salsa or sour cream.

Notes

For extra flavor, add a layer of sliced jalapeños. Adjust spice level by choosing mild or spicy enchilada mix.
