  • 1.5 lbs cooked chicken
  • 2 cups cooked rice
  • 1 can diced tomatoes, undrained
  • 1 cup corn
  • 1 cup shredded cheddar cheese
  • 0.5 cup sour cream
  • 1 tsp chili powder

Preparation Steps

  • Preheat oven to 350°F (175°C).
  • In a large bowl, combine cooked chicken, rice, diced tomatoes, corn, cheddar cheese, and sour cream. Stir in chili powder.
  • Pour mixture into a greased 9x13 inch baking dish.
  • Bake for 25-30 minutes, or until heated through and bubbly.

Notes

Serve hot. Garnish with extra cheese and sour cream if desired.
