Melting Potatoes

These melting potatoes are crispy on the outside and creamy on the inside, making them a perfect side dish for any meal.

  • 2 pounds Yukon Gold potatoes peeled and cut into 1-inch slices
  • 3 tablespoons unsalted butter melted
  • 1 cup chicken broth
  • 2 cloves garlic minced
  • 1 teaspoon kosher salt
  • 0.5 teaspoon black pepper freshly ground

Preparation Steps

  • Preheat oven to 500°F (260°C). Place the sliced potatoes in a single layer in a large baking dish.
  • Pour melted butter over the potatoes, and season with salt and pepper. Toss to coat evenly.
  • Bake potatoes for 15 minutes, then flip and bake for another 15 minutes.
  • Remove dish from oven, pour chicken broth and sprinkle garlic over potatoes.
  • Return to oven and bake for an additional 5 minutes or until tender and caramelized.

Notes

Serve hot, and enjoy your delicious melting potatoes as a side dish with grilled meat or roasted chicken.
