Melt In Your Mouth Chicken

  • 2 lbs boneless, skinless chicken thighs
  • 0.5 cup soy sauce (low sodium preferred)
  • 0.25 cup honey
  • 0.1875 cup brown sugar
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon cornstarch mixed with 2 tablespoons water
  • 1 tablespoon sesame seeds optional

Preparation Steps

  • In a small bowl, whisk together soy sauce, honey, brown sugar, minced garlic, grated ginger, rice vinegar, and sesame oil to create the glaze.
  • Pat chicken thighs dry with paper towels and season lightly with salt and pepper on both sides.
  • Heat a large skillet over medium-high heat. Add a little oil and sear chicken thighs for 4-5 minutes per side until golden brown. Remove chicken and set aside.
  • Reduce heat to medium. Pour the prepared glaze into the same skillet. Bring to a simmer and cook for 2-3 minutes.
  • Return chicken to the skillet, spooning glaze over it. Cover and simmer for 15-20 minutes, turning occasionally, until chicken is cooked through and tender.
  • Remove chicken from skillet. Stir cornstarch slurry into the remaining glaze and cook for 1-2 minutes until slightly thickened.
  • Pour the thickened glaze over chicken. Garnish with sliced green onions and sesame seeds before serving.

Notes

Serve hot over steamed rice or noodles for a complete meal.
