This refreshing Mediterranean Quinoa Salad is packed with vibrant veggies, a burst of fresh flavors, and topped with a lemon-tahini dressing.

  • 2 cups cooked quinoa cooled
  • 1 cup cherry tomatoes halved
  • 0.5 cup cucumber diced
  • 0.25 cup red onion finely chopped
  • 0.5 cup feta cheese crumbled
  • 0.25 cup kalamata olives sliced
  • 3 tablespoons fresh parsley chopped

Dressing

  • 0.25 cup extra virgin olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 1 tablespoon tahini
  • 1 teaspoon honey
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Preparation Steps

  • In a small bowl, whisk together all dressing ingredients until smooth and well combined. Adjust seasoning if necessary.
  • In a large salad bowl, combine cooked quinoa, cherry tomatoes, cucumber, red onion, feta cheese, and olives.
  • Pour the dressing over the salad and toss gently to coat all ingredients evenly.
  • Garnish with fresh parsley before serving.

Notes

For best results, serve the salad fresh. If storing, keep the dressing separate and mix just before serving to maintain freshness.
