Mediterranean Chicken Bake

  • 1.5 pounds boneless, skinless chicken thighs
  • 1 cup cherry tomatoes, halved
  • 0.5 cup kalamata olives, pitted and halved
  • 4 ounces feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper

Preparation Steps

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, toss the chicken thighs with olive oil, dried oregano, garlic powder, salt, and pepper until evenly coated.

  • Arrange the seasoned chicken in a single layer in a baking dish.
  • Scatter the halved cherry tomatoes and olives around the chicken.

  • Bake for 20-25 minutes, or until the chicken is cooked through and the tomatoes are softened.
  • Remove from oven and sprinkle the crumbled feta cheese over the top.

  • Return to the oven for another 5 minutes, or until the feta is slightly softened and golden.
  • Let stand for a few minutes before serving.

Notes

Serve with a side of couscous or a fresh green salad for a complete meal.
