  • 1 lb Ground beef
  • 0.5 lb Ground pork
  • 1 cup Breadcrumbs
  • 1 egg Egg
  • 0.5 cup Milk
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 8 cups Chicken broth
  • 1 cup Diced carrots
  • 1 cup Diced celery
  • 1 cup Diced onion
  • 1 tsp Dried oregano
  • 0.5 cup Parsley

Preparation Steps

  • Preheat oven to 375°F (190°C).
  • In a large bowl, combine ground beef, ground pork, breadcrumbs, egg, milk, salt, and pepper. Mix well.
  • Roll the mixture into 1-inch meatballs.
  • In a large pot or Dutch oven, brown the meatballs over medium heat. Remove meatballs and set aside.
  • Add carrots, celery, and onion to the pot and cook until softened, about 5 minutes.
  • Stir in chicken broth, oregano and parsley. Bring to a boil, then reduce heat and simmer for 15 minutes.
  • Return meatballs to the pot. Simmer for another 30 minutes, or until meatballs are cooked through.

Notes

Serve hot with crusty bread.
