Matcha lavender cookies

Delicate and fragrant matcha lavender cookies, perfect for an afternoon tea or a special treat.

  • 2.5 cup all-purpose flour
  • 0.5 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1.5 tablespoon culinary lavender buds, finely chopped
  • 2 tablespoon matcha powder

Preparation Steps

  • In a medium bowl, whisk together the flour and salt.
  • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Beat in the egg and vanilla extract until well combined.
  • In a small bowl, combine the chopped lavender buds and matcha powder.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the lavender and matcha mixture.
  • Cover the dough and chill in the refrigerator for at least 30 minutes.
  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  • Roll the dough into 1-inch balls and place them 2 inches apart on the prepared baking sheets. Flatten slightly with the bottom of a glass.
  • Bake for 10-12 minutes, or until the edges are lightly golden.
  • Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Notes

For a stronger lavender flavor, you can steep culinary lavender in the butter before creaming. Ensure you use culinary grade lavender.
