Matcha lavender cookies

Delicate and aromatic matcha lavender cookies, perfect for a special treat.

  • 0.5 cup unsalted butter softened
  • 0.75 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1.5 cup all-purpose flour
  • 1 tablespoon culinary lavender buds finely chopped
  • 1 tablespoon matcha powder culinary grade
  • 0.25 teaspoon salt

Preparation Steps

  • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Beat in the egg and vanilla extract until well combined.
  • In a separate bowl, whisk together the flour, chopped lavender buds, matcha powder, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  • Cover the dough and chill in the refrigerator for at least 30 minutes.
  • Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  • Roll the dough into 1-inch balls and place them on the prepared baking sheets, leaving about 2 inches between cookies.
  • Bake for 10-12 minutes, or until the edges are lightly golden and the centers are set.
  • Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Notes

These cookies are best enjoyed fresh but can be stored in an airtight container at room temperature for up to 3 days.
