Ingredients
- 1 tablespoon olive oil
- 1 shallot finely chopped
- 3 cloves garlic minced
- 1 cup orzo dry
- 1 can chickpeas 15 ounces, drained and rinsed
- 2 tablespoons sun-dried tomatoes chopped
- 2 cups vegetable broth
- 1/2 cup heavy cream
- 1/4 cup parmesan cheese finely grated
- 1 teaspoon fresh thyme leaves
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper freshly ground
Instructions
Warm the olive oil in a large skillet over medium heat. Add the shallot and cook until softened, about 2 minutes.
Stir in the garlic and cook for 30 seconds, just until fragrant.
Add the orzo, chickpeas, sun-dried tomatoes, vegetable broth, salt, and black pepper.
Bring the mixture to a simmer, then cook for 9 to 11 minutes, stirring often, until the orzo is tender and most of the broth is absorbed.
Lower the heat and stir in the heavy cream, parmesan cheese, and fresh thyme until the sauce is smooth and creamy.
Rest the skillet for 2 minutes, then taste and adjust the seasoning before serving warm.
