  • 3 tablespoons cornstarch
  • 1.5 teaspoons sea salt
  • 1 teaspoon garlic powder
  • 1 teaspoon cayenne pepper Adjust to taste
  • 1 cup maple syrup
  • 2 tablespoons soy sauce Low sodium
  • 1 tablespoon apple cider vinegar
  • 0.5 teaspoon sesame oil
  • 1 teaspoon sesame seeds For garnish

Preparation Steps

  • Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper and place a wire rack on top.
  • In a small bowl, mix cornstarch, sea salt, garlic powder, and cayenne pepper.
  • Place chicken wing sections in a large mixing bowl. Sprinkle half the dry rub over the wings and toss to coat. Repeat with the remaining rub.
  • Arrange wings on the wire rack in a single layer. Ensure they are not touching.
  • Bake wings for 30 minutes, flip, and bake for another 15 minutes until crispy and cooked through.
  • In a saucepan, combine maple syrup, soy sauce, apple cider vinegar, and sesame oil. Heat gently until smooth and slightly thickened.
  • Transfer baked wings to a large bowl. Pour maple glaze over wings; toss to coat.
  • Serve wings garnished with sesame seeds.

Notes

For a gluten-free version, ensure that your soy sauce is certified gluten-free. Adjust the level of cayenne pepper to customize the spiciness. Letting the wings sit uncovered in the fridge after seasoning can further enhance crispiness.
