Instructions
Preparation Steps
Cook the bacon in a large skillet over medium heat until crispy. Transfer to a paper towel-lined plate to drain.
Reserve 1.5 cups of bacon drippings and return them to the skillet.
Add sliced onions to the skillet and sauté until caramelized, about 10-15 minutes.
Stir in minced garlic, smoked paprika, and black pepper. Cook until fragrant.
Return bacon to the skillet, then add bourbon, coffee, vinegar, and maple syrup. Stir and bring to a simmer.
Reduce heat and simmer for 45 minutes, stirring occasionally, until thickened.
Stir in tomato paste and cook for an additional 5 minutes until glossy.
Let cool slightly, then pulse in a food processor for a smoother texture if desired, or leave chunky.
Transfer to sterilized jars and cool completely before refrigerating.

Ensure to use gluten-free bourbon and ketchup for those with gluten sensitivities. Delicious on sandwiches or as a glaze for meats.
