  • 3.5 pounds thick-sliced bacon cut into 1-inch pieces
  • 1.5 cups bacon drippings reserved
  • 5 medium red onions thinly sliced
  • 1.25 cups dark brown sugar
  • 3 tablespoons minced garlic
  • 1.5 teaspoons smoked paprika
  • 1 teaspoon ground black pepper
  • 2 cups bourbon use a quality brand
  • 1.5 cups strong brewed coffee cooled
  • 1 cup apple cider vinegar
  • 1 cup maple syrup pure
  • 1.5 cups tomato paste

Preparation Steps

  • Cook the bacon in a large skillet over medium heat until crispy. Transfer to a paper towel-lined plate to drain.
  • Reserve 1.5 cups of bacon drippings and return them to the skillet.
  • Add sliced onions to the skillet and sauté until caramelized, about 10-15 minutes.
  • Stir in minced garlic, smoked paprika, and black pepper. Cook until fragrant.
  • Return bacon to the skillet, then add bourbon, coffee, vinegar, and maple syrup. Stir and bring to a simmer.
  • Reduce heat and simmer for 45 minutes, stirring occasionally, until thickened.
  • Stir in tomato paste and cook for an additional 5 minutes until glossy.
  • Let cool slightly, then pulse in a food processor for a smoother texture if desired, or leave chunky.
  • Transfer to sterilized jars and cool completely before refrigerating.

Notes

Ensure to use gluten-free bourbon and ketchup for those with gluten sensitivities. Delicious on sandwiches or as a glaze for meats.
