mandarin orange salad

A refreshing and tangy mandarin orange salad tossed with crunchy pecans and a homemade vinaigrette, perfect as a side dish or light meal.

Ingredients
  

Main Ingredients

  • 0.25 cup vegetable oil
  • 2 tablespoons granulated sugar
  • 2 tablespoons white vinegar
  • 0.25 teaspoon kosher salt
  • 4 cranks fresh ground black pepper
  • 1 tablespoon fresh parsley
  • 8 drops Tabasco sauce
  • 0.5 cup sliced pecans
  • 2 tablespoons sugar
  • 3 bunches romaine lettuce or one package of 3 stalks
  • 2 green onions green onions (chopped)
  • 2 stalks celery diced
  • 1 can mandarin oranges, drained (15 ounce)

Instructions
 

Preparation Steps

  • In a small bowl, mix ingredients for dressing, refrigerate until ready to serve.
  • For nuts, sauté sliced pecans in 2 tablespoons sugar on medium heat, until browned.
  • Chop lettuce and place in a large bowl. Add chopped green onions, diced celery, and drained mandarin oranges.
  • Top with sugared pecans and drizzle with prepared dressing just before serving.

Notes

This salad is best served fresh. Feel free to add grilled chicken for a protein boost.
