These Loaded Potato Bites are crispy on the outside and creamy on the inside with layers of melted cheese and savory toppings. Perfect for parties or as a comforting snack.

  • 6 medium Yukon Gold potatoes scrubbed clean
  • 10 slices Turkey bacon crispy cooked
  • 1 teaspoon salt divided
  • 1 teaspoon black pepper freshly cracked, divided
  • 8 ounces Monterey Jack cheese shredded
  • 4 pieces Scallions thinly sliced
  • 1 cup Plain Greek yogurt for serving
  • 0.5 teaspoon Paprika for garnish

Preparation Steps

  • Cook the bacon until crispy and set aside to cool on a paper towel-lined plate.
  • Preheat oven to 425°F (220°C). Slice the potatoes into 1/2-inch thick rounds. In a large bowl, toss with olive oil, 1/2 teaspoon salt, and 1/2 teaspoon pepper.
  • Arrange potato slices on a parchment-lined baking sheet. Bake for 20 minutes or until tender.
  • Remove from oven and top each slice with cheese and crumbled bacon.
  • Return to oven for 10 more minutes or until the cheese is melted and bubbly.
  • Garnish with scallions and paprika. Serve with Greek yogurt on the side.

Notes

These bites are best enjoyed fresh out of the oven. Consider serving with a side of salsa for an extra kick!
