Instructions
Preparation Steps
Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a bowl, mix together flour, baking powder, and salt.
In another bowl, cream together butter and sugar until light and fluffy. Add in the ricotta cheese, lemon zest, vanilla extract, and the egg.
Slowly mix in the dry ingredients until just combined. Do not overmix.
Drop tablespoonfuls of dough onto the prepared baking sheet.
Bake for 15 minutes or until the edges are golden. Allow to cool on a wire rack.
