  • 1.5 cups all-purpose flour
  • 1 cup granulated sugar
  • 0.5 cup butter softened
  • 1 cup ricotta cheese whole milk
  • 1 tablespoon lemon zest freshly grated
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon salt
  • 1 egg large

Preparation Steps

  • Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a bowl, mix together flour, baking powder, and salt.
  • In another bowl, cream together butter and sugar until light and fluffy. Add in the ricotta cheese, lemon zest, vanilla extract, and the egg.
  • Slowly mix in the dry ingredients until just combined. Do not overmix.
  • Drop tablespoonfuls of dough onto the prepared baking sheet.
  • Bake for 15 minutes or until the edges are golden. Allow to cool on a wire rack.

These cookies stay fresh in an airtight container for up to 3 days.
