  • 2 lbs chicken breasts boneless, skinless
  • 3 tablespoons olive oil extra virgin
  • 2 tablespoons lemon juice freshly squeezed
  • 1 tablespoon garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper freshly ground
  • 3 tablespoons butter unsalted

  • In a large bowl, mix together the olive oil, lemon juice, minced garlic, dried oregano, dried thyme, salt, and black pepper to create a marinade.
  • Add the chicken breasts to the marinade, ensuring each piece is well coated. Let it marinate for at least 15 minutes.
  • Preheat the grill to medium heat. Once heated, place the chicken breasts on the grill.
  • Grill the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
  • Meanwhile, in a small saucepan, melt the butter over low heat and add any remaining marinade. Cook for 2-3 minutes until fragrant.
  • Remove the chicken from the grill and let it rest for a few minutes. Serve drizzled with the garlic butter sauce.

Notes

Allowing the chicken to rest after grilling helps maintain its juiciness.
