Lemon Herb Chicken & Rice: The Zesty Weeknight Delight!

This Lemon Herb Chicken & Rice recipe combines savory chicken with fragrant herbs and a citrusy twist, making it an easy gourmet dinner in under 45 minutes!

Ingredients
  

Chicken Marinade

  • 2.5 lbs bone-in chicken thighs skin-on
  • 0.25 cup olive oil extra virgin
  • 2 tbsp lemon juice freshly squeezed
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 0.5 tsp salt
  • 0.5 tsp black pepper freshly ground

Rice and Vegetables

  • 2 cups long-grain white rice rinsed
  • 4 cups chicken broth
  • 1 large bell pepper diced
  • 1 medium onion chopped
  • 2 tbsp butter unsalted
  • 1 cup green peas fresh or frozen

Preparation Steps

  • In a large bowl, mix olive oil, lemon juice, oregano, garlic powder, salt, and pepper. Add chicken and toss to coat. Let marinate for at least 15 minutes.
  • Heat a large skillet over medium-high heat. Cook chicken skin-side down for 5-7 minutes until golden. Flip and cook another 5-7 minutes until cooked through.
  • In a saucepan, bring chicken broth to a boil. Stir in rice, reduce heat to low, cover, and simmer for 18-20 minutes until rice is tender.
  • In a separate pan, melt butter over medium heat. Add onion and bell pepper, sauté for 3-4 minutes. Stir in peas and cook until warmed through.
  • To serve, scoop rice onto plates, top with chicken, and spoon vegetable mixture over. Garnish with extra lemon wedges if desired.

Notes

For a fresher taste, consider adding a handful of chopped fresh cilantro or parsley before serving.
