Lemon Frosted Cookies

These soft and chewy lemon cookies are topped with a tangy lemon frosting. A perfect treat for any occasion!

  • 1 cup unsalted butter
  • 1.5 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 cup powdered sugar
  • 2 tablespoons lemon juice

Preparation Steps

  • Preheat oven to 375°F (190°C).
  • Cream together butter and sugar until light and fluffy.
  • Beat in eggs one at a time, then stir in vanilla.
  • In a separate bowl, whisk together flour, baking powder, and salt.
  • Gradually add dry ingredients to wet ingredients, mixing until just combined.
  • Roll dough into 1-inch balls and place on ungreased baking sheets.
  • Bake for 10-12 minutes, or until edges are lightly golden.
  • Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
  • While cookies are cooling, whisk together powdered sugar and lemon juice to make frosting. Drizzle over cooled cookies.

Notes

Store cookies in an airtight container at room temperature for up to 3 days.
