  • 2 cups all-purpose flour sifted for accuracy
  • 1.5 cups sugar granulated
  • 1 cup butter softened
  • 4 eggs large
  • 0.5 cup lemon juice freshly squeezed
  • 2 tbsp lemon zest finely grated
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 0.5 cup milk whole

Preparation Steps

  • Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  • In a large bowl, cream the butter and sugar together until light and fluffy.
  • Add eggs one at a time, beating well after each addition.
  • Stir in lemon juice and zest until well combined.
  • In another bowl, sift together all-purpose flour, baking powder, and salt.
  • Alternately add dry ingredients and milk to the wet mixture, starting and ending with dry, and mix until just combined.
  • Divide the batter evenly between the prepared pans and smooth the tops.
  • Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  • Allow cakes to cool in pans for 10 minutes, then turn out onto wire racks to cool completely.

Notes

Decorate with additional lemon zest on top for extra tang! Keep refrigerated to maintain freshness.
