  • 1 teaspoon baking powder

Preparation Steps

  • Preheat the oven to 350°F (175°C). Grease an 8x8 inch baking pan with cooking spray or line it with parchment paper.
  • In a medium bowl, combine almond flour, melted butter, and honey. Mix until a dough forms. Press the dough evenly into the bottom of the prepared pan.
  • In a large bowl, whisk together the eggs, lemon zest, lemon juice, baking powder, and salt. Gently fold in the blueberries.
  • Pour the lemon blueberry mixture over the crust and spread evenly.
  • Bake in the preheated oven for 25 minutes or until the edges are golden and the center is set.
  • Allow the bars to cool completely in the pan on a wire rack before cutting into squares.

Notes

For an extra burst of flavor, consider dusting with powdered sugar before serving. These bars can be stored in an airtight container in the refrigerator for up to 5 days.
