Lemon Blueberry Bars

These lemon blueberry bars are bursting with fresh lemon zest and juicy blueberries. A perfect balance of sweet and tart, they're easy to make and even easier to devour!

Ingredients
  

Crust Ingredients

  • 1.5 cups all-purpose flour
  • 0.5 cups rolled oats
  • 0.5 cup packed brown sugar
  • 0.5 teaspoon salt
  • 1 cup cold unsalted butter cut into cubes

Lemon Blueberry Filling

  • 2 cups fresh blueberries
  • 1 cup granulated sugar
  • 0.5 cup lemon juice freshly squeezed
  • 2 tablespoons lemon zest
  • 2 large eggs
  • 1 teaspoon vanilla extract

Preparation Steps

  • Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  • Combine flour, oats, brown sugar, and salt in a large bowl. Cut in cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  • Press half of the crust mixture into the prepared pan.
  • In a separate bowl, whisk together blueberries, sugar, lemon juice, lemon zest, eggs, and vanilla extract.
  • Pour the blueberry mixture over the crust.
  • Crumble the remaining crust mixture over the top.
  • Bake for 25-30 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
  • Let cool completely before cutting into bars.

Notes

Store leftover bars in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
