Lasagna Soup Recipe

This Lasagna Soup is a hearty and delicious dish combining all the flavors of traditional lasagna in a comforting bowl of soup.

  • 1 lb ground beef lean
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 4 cups beef broth
  • 2 cups crushed tomatoes
  • 1 tsp Italian seasoning
  • 8 oz lasagna noodles broken into pieces
  • 1 cup mozzarella cheese shredded
  • 1 cup ricotta cheese

Preparation Steps

  • In a large pot, brown the ground beef over medium heat until no longer pink. Drain excess fat.
  • Add chopped onion and minced garlic to the pot, cook until onion is soft.
  • Pour in beef broth and crushed tomatoes. Stir in Italian seasoning and bring to a boil.
  • Add lasagna noodles to the pot. Reduce heat and simmer until noodles are tender, about 10 minutes.
  • Serve the soup hot, topped with mozzarella and a dollop of ricotta cheese.

Notes

This soup can be stored in the refrigerator for up to 3 days.
