  • 1 pound hot Italian sausage
  • 1 pound ground beef
  • 2 cups chopped small onions
  • 4 cloves garlic, minced
  • 2 tablespoons Italian seasoning
  • 0.5 teaspoon crushed red pepper flakes
  • 6 ounces tomato paste
  • 29 ounces diced tomatoes with garlic
  • 8 cups chicken broth
  • 1 teaspoon kosher salt
  • 0.5 teaspoon black pepper, freshly ground
  • 8 ounces mafalda pasta
  • 8 ounces ricotta cheese
  • 2 ounces Parmesan cheese
  • 2 ounces shredded mozzarella cheese

Preparation Steps

  • In a large pot, cook sausage and ground beef until browned. Add onions and garlic, cooking until soft. Stir in Italian seasoning and red pepper flakes.
  • Add tomato paste, diced tomatoes, chicken broth, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
  • Meanwhile, cook pasta according to package instructions. Drain and set aside.
  • Stir cooked pasta into the soup. In a small bowl, mix ricotta, Parmesan, and mozzarella cheeses.
  • Serve hot with a scoop of cheese mixture on top.
