Italian Pasta Salad

A refreshing and flavorful Italian pasta salad with a tangy vinaigrette, fresh vegetables, and Italian cheeses.

  • 8 oz pasta (such as rotini or penne)
  • 0.25 cup extra-virgin olive oil
  • 2 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • 0.5 teaspoon dried oregano
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 cup cherry tomatoes, halved
  • 0.5 cup red onion, finely diced
  • 0.5 cup kalamata olives, sliced
  • 0.5 cup mozzarella cheese, cubed
  • 0.25 cup fresh basil leaves, chopped
  • 0.25 cup grated Parmesan cheese

Preparation Steps

  • Cook the pasta according to package directions until al dente. Drain and rinse under cold water to cool.
  • In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, garlic, oregano, salt, and pepper to make the dressing.
  • In a large bowl, combine the cooled pasta, cherry tomatoes, red onion, kalamata olives, mozzarella cubes, and half of the chopped basil.
  • Pour the dressing over the pasta mixture and toss gently to combine.
  • Sprinkle with Parmesan cheese and remaining basil. Serve chilled or at room temperature.
