Preparation Steps
Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
In a large bowl, mix together the shredded chicken, ricotta, spinach, and 1/2 cup of the mozzarella cheese. Season with garlic powder and Italian seasoning.
Spread a thin layer of marinara sauce at the bottom of the prepared baking dish.
Place about 1/3 cup of the chicken mixture on each lasagna noodle, roll them up, and arrange seam-side down in the dish.
Pour remaining marinara sauce over the roll-ups and sprinkle with the rest of the mozzarella cheese.
Cover with aluminum foil and bake for 25 minutes, then remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
Allow to cool for 5 minutes before serving for easier slicing.
