  • 8 pieces lasagna noodles cooked according to package instructions
  • 2 cups cooked chicken breast shredded
  • 15 oz ricotta cheese
  • 10 oz fresh spinach chopped
  • 1 cup shredded mozzarella cheese divided
  • 2 cups marinara sauce store-bought or homemade
  • 1 teaspoon Italian seasoning
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder

Preparation Steps

  • Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  • In a large bowl, mix together the shredded chicken, ricotta, spinach, and 1/2 cup of the mozzarella cheese. Season with garlic powder and Italian seasoning.
  • Spread a thin layer of marinara sauce at the bottom of the prepared baking dish.
  • Place about 1/3 cup of the chicken mixture on each lasagna noodle, roll them up, and arrange seam-side down in the dish.
  • Pour remaining marinara sauce over the roll-ups and sprinkle with the rest of the mozzarella cheese.
  • Cover with aluminum foil and bake for 25 minutes, then remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
  • Allow to cool for 5 minutes before serving for easier slicing.

Notes

Feel free to use store-bought marinara sauce for convenience, or make your own for a personal touch.
