  • 1.5 cup powdered sugar
  • 2 teaspoons lemon zest freshly grated
  • 1 teaspoon vanilla extract
  • 2.5 cups all-purpose flour
  • 0.5 cup almond meal finely ground
  • 0.25 teaspoon salt

Preparation Steps

  • In a large mixing bowl, cream together the butter and powdered sugar until light and fluffy, about 3 minutes.
  • Mix in the lemon zest and vanilla extract until well combined.
  • In a separate bowl, whisk together the all-purpose flour, almond meal, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing on low speed until a dough forms.
  • Roll the dough into a log, approximately 2 inches in diameter, wrap in plastic wrap, and refrigerate for 1 hour.
  • Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  • Slice the dough into 1/4 inch rounds and place on prepared baking sheets. Bake for 15 minutes or until edges are just golden.

Notes

For an added touch, drizzle the cooled cookies with a simple lemon glaze made from powdered sugar and lemon juice.
