Instructions
Preparation Steps
In a large mixing bowl, cream together the butter and powdered sugar until light and fluffy, about 3 minutes.
Mix in the lemon zest and vanilla extract until well combined.
In a separate bowl, whisk together the all-purpose flour, almond meal, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing on low speed until a dough forms.
Roll the dough into a log, approximately 2 inches in diameter, wrap in plastic wrap, and refrigerate for 1 hour.
Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
Slice the dough into 1/4 inch rounds and place on prepared baking sheets. Bake for 15 minutes or until edges are just golden.
Notes
For an added touch, drizzle the cooled cookies with a simple lemon glaze made from powdered sugar and lemon juice.
