  • 2.5 pounds potatoes preferably russet or Yukon gold
  • 0.5 cup milk whole milk recommended
  • 0.25 cup butter unsalted
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper freshly ground
  • 2 tablespoons chives finely chopped

Preparation Steps

  • Peel the potatoes and cut them into evenly sized chunks.
  • Place the potatoes in a pot and cover with cold water. Add a pinch of salt.
  • Bring to a boil, then reduce the heat and simmer until tender, about 20 minutes.
  • Drain the potatoes and return them to the pot.
  • Mash the potatoes with butter, milk, salt, and pepper until smooth.
  • Stir in the chives and serve warm.

Notes

For an extra creamy texture, you can add more milk.
