Instructions
Preparation Steps
Preheat the oven to 400°F (200°C).
Rub the chicken with olive oil, salt, and pepper.
Stuff the cavity with minced garlic, sliced onion, rosemary sprigs, and lemon halves.
Place the chicken in a roasting pan. Surround with root vegetables.
Roast for 1 hour and 45 minutes or until the internal temperature reaches 165°F (74°C) at the thickest part.
Let the chicken rest for 10 minutes before carving.
