  • 0.5 cups unsalted butter Melted
  • 3 packages cream cheese 24 ounces total, softened to room temperature
  • 1 cup granulated sugar
  • 3 tablespoons all-purpose flour Sifted
  • 1 teaspoon vanilla extract
  • 4 large eggs At room temperature
  • 8 ounces semi-sweet chocolate Melted and cooled

Preparation Steps

  • Preheat the oven to 325°F (163°C). In a bowl, combine chocolate cookie crumbs and melted butter. Press mixture firmly into the bottom of a springform pan.
  • In a large mixing bowl, beat the cream cheese on medium speed until smooth. Gradually add sugar and flour, and continue to beat until combined.
  • Add vanilla extract and mix on low speed. Incorporate eggs one at a time, beating well after each addition.
  • Pour in melted chocolate, and gently fold it into the cream cheese mixture until well combined.
  • Pour the filling onto the prepared crust, spreading it evenly.
  • Bake in preheated oven for 50 minutes or until center is set. Let cheesecake cool in the pan on a wire rack.
  • Once cooled, refrigerate the cheesecake for at least 4 hours before serving.

Notes
