  • 1 pound bacon diced
  • 1 medium onion finely chopped
  • 3 cloves garlic minced
  • 1 pound fettuccine pasta
  • 1.5 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 0.5 cup chicken broth
  • 0.5 teaspoon black pepper or to taste
  • 0.25 teaspoon salt or to taste

Preparation Steps

  • In a large pan, cook the bacon over medium heat until crispy. Remove and drain on paper towels, leaving 2 tablespoons of bacon fat in the pan.
  • Add the chopped onion to the bacon fat and sauté until translucent. Stir in the minced garlic and cook for 1 minute.
  • Meanwhile, cook the pasta according to package instructions. Reserve 1/2 cup pasta water and drain the rest.
  • Stir the heavy cream and chicken broth into the onion mixture. Bring to a simmer and reduce the heat to low.
  • Gradually add the Parmesan cheese, stirring until melted and smooth. Season with salt and pepper.
  • Toss the cooked pasta into the sauce along with half of the crispy bacon. Add reserved pasta water if needed to thin the sauce.
  • Serve immediately, garnished with remaining bacon and extra Parmesan cheese if desired.

Notes

This dish can be enhanced by adding grilled chicken or shrimp. Experiment with different pasta shapes for more variety.
