  • 1.5 lbs chicken breast thinly sliced
  • 3 tbsp olive oil
  • 2 cups broccoli florets fresh
  • 1 cup cherry tomatoes halved
  • 1 red bell pepper sliced
  • 4 cloves garlic minced
  • 1 tsp salt divided
  • 0.5 tsp ground black pepper divided
  • 0.5 cup parmesan cheese grated
  • 1 tsp dried Italian herbs such as basil, oregano
  • 0.5 cup chicken broth
  • 1 lemon juice and zest

Preparation Steps

  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  • Season the sliced chicken breast with 1/2 teaspoon of salt and 1/4 teaspoon of pepper.
  • Add chicken to the skillet and sauté for 5-7 minutes until golden and fully cooked. Remove from pan and set aside.
  • In the same skillet, add the remaining olive oil. Sauté garlic until fragrant, about 1 minute.
  • Add broccoli, bell pepper, and cherry tomatoes to the skillet. Cook for 5-7 minutes until tender-crisp.
  • Pour in chicken broth and lemon juice. Bring to a simmer.
  • Return the chicken to the skillet, add Italian herbs and parmesan cheese. Toss everything well and serve immediately.

Notes

Adjust the seasoning to your preference, and feel free to add a sprinkle of red pepper flakes for some heat.
