Instructions
Preparation Steps
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
Season the sliced chicken breast with 1/2 teaspoon of salt and 1/4 teaspoon of pepper.
Add chicken to the skillet and sauté for 5-7 minutes until golden and fully cooked. Remove from pan and set aside.
In the same skillet, add the remaining olive oil. Sauté garlic until fragrant, about 1 minute.
Add broccoli, bell pepper, and cherry tomatoes to the skillet. Cook for 5-7 minutes until tender-crisp.
Pour in chicken broth and lemon juice. Bring to a simmer.
Return the chicken to the skillet, add Italian herbs and parmesan cheese. Toss everything well and serve immediately.
Notes
Adjust the seasoning to your preference, and feel free to add a sprinkle of red pepper flakes for some heat.
