  • 1 pound linguine pasta dry
  • 3 pieces chicken thighs boneless, skinless
  • 3 tablespoons Cajun seasoning homemade or store-bought
  • 6 cloves garlic minced
  • 1 large yellow onion thinly sliced
  • 1 large orange bell pepper thinly sliced
  • 3.5 cups half-and-half
  • 1 cup Parmesan cheese grated
  • 4 tablespoons vegetable oil divided
  • to taste salt and black pepper

Preparation Steps

  • Prepare the Chicken: Pound the chicken thighs to an even thickness. Coat with 2 tablespoons of vegetable oil and 2 tablespoons of Cajun seasoning.
  • Cook the Chicken: Heat 2 tablespoons of oil in a skillet over medium heat. Cook chicken until golden and cooked through, about 5 minutes each side. Remove and slice.
  • Sauté the Vegetables: In the same skillet, add onion and bell pepper. Sauté until soft, then add the minced garlic and remaining Cajun seasoning.
  • Cook the Pasta: In a pot of boiling salted water, cook the linguine until al dente. Reserve some pasta water and drain.
  • Make the Sauce: Add half-and-half to the skillet with the vegetables, simmer until slightly thickened. Stir in Parmesan until melted. Adjust seasoning. Add chicken and pasta, toss to coat.

Notes

Customize the dish by varying the amount of Cajun seasoning to taste. Use reserved pasta water to adjust sauce consistency if needed.
