  • 12 ounces turkey sausage cooked and crumbled
  • 2 cups baby kale chopped
  • 1 cup yellow bell pepper diced
  • 6 medium white onions chopped
  • 2 cups shredded mozzarella cheese divided
  • 18 large eggs
  • 1 cup half-and-half
  • 1.5 teaspoons salt
  • 1.5 teaspoons black pepper
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 0.5 teaspoon red pepper flakes optional

Preparation Steps

  • Preheat your oven to 375°F (190°C) and lightly grease a sheet pan with olive oil.
  • Spread the cooked turkey sausage, kale, bell pepper, and white onions evenly across the pan. Sprinkle half of the mozzarella cheese evenly over these ingredients.
  • In a large mixing bowl, beat together the eggs, half-and-half, salt, black pepper, paprika, onion powder, and red pepper flakes until everything is well combined.
  • Gently pour the egg mixture over the topping layers in the sheet pan. Top with the remaining mozzarella cheese.
  • Bake in the preheated oven for 25 minutes or until the eggs are fully set and the cheese is golden brown.
  • Allow the omelet to cool slightly before cutting it into portions. Serve warm.
