  • 3 cups heavy cream divided
  • 3 cups fresh raspberries washed and divided
  • 1 cup granulated sugar divided
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice
  • 1 small vanilla sponge cake cubed

Preparation Steps

  • Make the Chocolate Mousse: Melt the semi-sweet chocolate in a heatproof bowl set over a pot of simmering water. Stir until smooth. Remove from heat and let cool slightly.
  • In a separate bowl, whip 2 cups of heavy cream to soft peaks and gently fold it into the melted chocolate until fully combined. Refrigerate the mousse until ready to use.
  • Prepare Raspberry Compote: In a saucepan over medium heat, combine 2 cups of raspberries, 1/2 cup sugar, and lemon juice. Cook until the mixture thickens slightly, about 10 minutes. Remove from heat and let cool.
  • Whip the Remaining Cream: In another bowl, combine the remaining heavy cream, sugar, and vanilla extract. Whip to soft peaks and set aside.
  • Assemble the Trifles: In each trifle dish or glass, layer cubed vanilla sponge cake, chocolate mousse, raspberry compote, and whipped cream. Repeat layers, ending with whipped cream.
  • Top with Fresh Raspberries: Garnish the top of each trifle with fresh raspberries and serve immediately.

Notes

Alternative: For a different flavor, try substituting the raspberry compote with strawberry or blueberry. The versatility makes it a customizable favorite!
