  • 3 lbs boneless skinless chicken thighs cut into 1-2 inch pieces
  • 2 cups cornstarch for coating
  • 1 cup all-purpose flour
  • 3 large eggs beaten
  • 3 tablespoons vegetable oil for frying
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 cups orange juice freshly squeezed
  • 2 tablespoons orange zest
  • 5 tablespoons soy sauce
  • 4 tablespoons rice vinegar
  • 0.75 cup brown sugar packed
  • 2 tablespoons sesame oil
  • 1 tablespoon cornstarch mixed with water for slurry
  • 1.5 cups dried red chili peppers whole
  • 2.5 tablespoons red pepper flakes optional for extra heat
  • 3 cloves garlic minced
  • 0.5 tablespoon ginger freshly grated

Preparation Steps

  • Combine orange juice, zest, soy sauce, rice vinegar, brown sugar, and 2 tbsp of sesame oil in a medium bowl. Stir until the sugar dissolves.
  • Whisk together eggs and 3 tablespoons of vegetable oil in another bowl until slightly foamy.
  • Mix cornstarch, flour, salt, and pepper in a large dish to coat the chicken.
  • Heat vegetable oil in a pot to 375°F.
  • Dip chicken pieces in egg mixture and then coat with cornstarch mixture. Fry in batches until crispy and golden.
  • In a wok, heat sesame oil and fry the dried chili peppers and red pepper flakes for 30 seconds.
  • Add garlic and ginger, stir briefly, and pour in the orange sauce. Simmer until it thickens, then add chicken and toss to coat.

Notes

For a milder version, reduce the amount of chili peppers and red pepper flakes. Serve with steamed rice or noodles for a complete meal.
