This delicious casserole combines layers of seasoned beef, creamy potatoes, and melted cheese for a satisfying meal. Perfect for any family gathering!

  • 3.5 lbs ground turkey 90% lean or leaner
  • 1 large red onion finely chopped
  • 5 cloves garlic minced
  • 5 medium sweet potatoes sliced into 1/4-inch rounds
  • 2 cups shredded Monterey Jack cheese
  • 2 cups shredded pepper jack cheese
  • 1.5 tbsp soy sauce
  • 1.5 tsp smoked paprika
  • 0.5 tsp cumin
  • 0.75 tsp red pepper flakes or to taste

For the Cream Sauce

  • 6 tbsp unsalted butter
  • 0.25 cup all-purpose flour or gluten-free blend
  • 2 cups whole milk
  • 1 cup chicken broth low sodium
  • 1 cup sour cream

Preparation Steps

  • Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish with butter or cooking spray.
  • In a large skillet, brown the ground turkey over medium-high heat until no longer pink. Drain any excess fat.
  • Add the chopped onion and garlic to the skillet. Sauté until onions are tender.
  • Mix in soy sauce, smoked paprika, cumin, and red pepper flakes. Stir well and set aside.
  • For the cream sauce, melt butter in a saucepan over medium heat. Whisk in flour and cook for a minute to create a roux.
  • Slowly whisk in milk and chicken broth until smooth and thickened. Remove from heat and stir in sour cream.
  • Layer half of the sweet potato slices in the baking dish. Spread half the turkey mixture over potatoes, then pour half of the sauce over the top.
  • Repeat the layers with remaining potatoes, turkey, and sauce.
  • Top with shredded Monterey Jack and pepper jack cheeses. Cover with foil and bake for 50 minutes.
  • Remove foil and bake for an additional 30-40 minutes until potatoes are tender and cheese is bubbly and golden.
  • Let the casserole rest for 10-15 minutes before serving for easier slicing.
