Preparation Steps
Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish with butter or cooking spray.
In a large skillet, brown the ground turkey over medium-high heat until no longer pink. Drain any excess fat.
Add the chopped onion and garlic to the skillet. Sauté until onions are tender.
Mix in soy sauce, smoked paprika, cumin, and red pepper flakes. Stir well and set aside.
For the cream sauce, melt butter in a saucepan over medium heat. Whisk in flour and cook for a minute to create a roux.
Slowly whisk in milk and chicken broth until smooth and thickened. Remove from heat and stir in sour cream.
Layer half of the sweet potato slices in the baking dish. Spread half the turkey mixture over potatoes, then pour half of the sauce over the top.
Repeat the layers with remaining potatoes, turkey, and sauce.
Top with shredded Monterey Jack and pepper jack cheeses. Cover with foil and bake for 50 minutes.
Remove foil and bake for an additional 30-40 minutes until potatoes are tender and cheese is bubbly and golden.
Let the casserole rest for 10-15 minutes before serving for easier slicing.
