  • 1 large egg
  • 24 mini peanut butter cups unwrapped

Preparation Steps

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
  • In a large bowl, beat peanut butter and butter with an electric mixer on medium speed until smooth.
  • Add in the granulated sugar, brown sugar, and vanilla. Beat until well combined. Mix in the egg.
  • Gradually add the dry ingredients to the peanut butter mixture, mixing until just combined.
  • Scoop tablespoonfuls of dough onto the prepared baking sheet. Press a mini peanut butter cup into the center of each dough ball.
  • Bake for 10-12 minutes or until the edges turn golden. Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
