  • 0.5 tsp black pepper freshly ground
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 14.5 oz diced tomatoes canned
  • 1 cup heavy cream
  • 0.5 cup Parmesan cheese grated
  • 1 tbsp basil fresh, chopped
  • 0.5 cup chicken broth low sodium

Preparation Steps

  • Season chicken thighs with salt and pepper on both sides.
  • Heat olive oil in a skillet over medium-high heat. Add chicken and sear until golden brown, about 4-5 minutes per side.
  • Remove chicken from skillet and set aside.
  • In the same skillet, add minced garlic and sauté until fragrant, about 1 minute.
  • Add diced tomatoes and chicken broth, stirring to combine.
  • Stir in heavy cream and let the mixture simmer for 5 minutes.
  • Return chicken to the skillet and spoon sauce over the top. Let it simmer for additional 10 minutes or until chicken is cooked through.
  • Remove skillet from heat and sprinkle with grated Parmesan cheese and fresh basil.

Notes

For a richer taste, substitute half of the heavy cream with cream cheese. Adjust seasonings according to taste preferences.
