Instructions
Preparation Steps
Season chicken thighs with salt and pepper on both sides.
Heat olive oil in a skillet over medium-high heat. Add chicken and sear until golden brown, about 4-5 minutes per side.
Remove chicken from skillet and set aside.
In the same skillet, add minced garlic and sauté until fragrant, about 1 minute.
Add diced tomatoes and chicken broth, stirring to combine.
Stir in heavy cream and let the mixture simmer for 5 minutes.
Return chicken to the skillet and spoon sauce over the top. Let it simmer for additional 10 minutes or until chicken is cooked through.
Remove skillet from heat and sprinkle with grated Parmesan cheese and fresh basil.
Notes
For a richer taste, substitute half of the heavy cream with cream cheese. Adjust seasonings according to taste preferences.
