  • 1 cup cremini mushrooms finely chopped
  • 1 cup ricotta cheese whole milk
  • 1 tbsp olive oil

  • 1 tsp black pepper freshly ground

Preparation Steps

  • Preheat your oven to 375°F (190°C).
  • In a skillet over medium heat, sauté the mushrooms in olive oil until golden brown, about 5 minutes.
  • Mix the ricotta cheese with sautéed mushrooms in a bowl. Season with salt and pepper.
  • Pound the chicken breasts to a 1/4-inch thickness between two sheets of plastic wrap.
  • Place a portion of the ricotta mushroom mixture on each chicken breast. Carefully roll the chicken, wrap it in prosciutto, and secure with twine.
  • Sear the roulades in a hot skillet until browned on all sides, about 4 minutes total.
  • Transfer the seared roulades to a baking dish. Bake in the oven for 25-30 minutes, or until internal temperature reaches 165°F (74°C).
