  • 1 teaspoon salt
  • 0.5 teaspoon black pepper freshly ground

Preparation Steps

  • Preheat your oven to 400°F (205°C) and line a baking sheet with parchment paper.
  • Rinse and trim the baby carrots, leaving a bit of the green tops if desired for presentation.
  • In a large mixing bowl, combine the olive oil, lemon juice, fresh thyme, garlic powder, salt, and pepper. Add the carrots and toss until well coated.
  • Spread the seasoned carrots in a single layer on the prepared baking sheet.
  • Roast in the preheated oven for 25-30 minutes, stirring once halfway through, until they are tender and lightly browned.
