  • 1 package tortilla chips lightly crushed
  • 2 cups shredded Mexican cheese blend divided
  • 1 can corn drained
  • 1 can black beans drained and rinsed
  • 1 cup salsa mild or spicy
  • 2 tablespoons taco seasoning store-bought or homemade

Preparation Steps

  • Preheat the oven to 375°F (190°C) and lightly grease a casserole dish.
  • In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  • Add taco seasoning and a splash of water to the beef. Simmer for 5 minutes.
  • Layer half of the tortilla chips on the bottom of the prepared dish.
  • Spread the cooked beef over the chips, followed by corn, black beans, and salsa. Sprinkle with half of the cheese.
  • Top with remaining tortilla chips and cheese.
  • Bake for 25-30 minutes, or until the cheese is melted and bubbly.
  • Let cool for 5 minutes before serving. Garnish with cilantro if desired.
