Preparation Steps
Heat olive oil in a large pot over medium heat. Add the ground turkey and cook until browned.
Add chopped onion and minced garlic to the pot. Sauté until the onion is translucent.
Stir in the chili powder and cook for 1 minute to release the flavors.
Add the kidney beans, chopped tomatoes, corn kernels, and vegetable broth. Stir well to combine.
Bring to a boil, then reduce heat to low. Cover and let simmer for 15-20 minutes.
Stir in the shredded cheddar cheese before serving.
