  • 1 medium red onion finely chopped
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 2 cups vegetable broth low sodium
  • 1 can kidney beans drained and rinsed
  • 1 can chopped tomatoes Italian style
  • 1 teaspoon chili powder adjust to taste
  • 0.5 cup corn kernels frozen or fresh
  • 1 cup cheddar cheese shredded

Preparation Steps

  • Heat olive oil in a large pot over medium heat. Add the ground turkey and cook until browned.
  • Add chopped onion and minced garlic to the pot. Sauté until the onion is translucent.
  • Stir in the chili powder and cook for 1 minute to release the flavors.
  • Add the kidney beans, chopped tomatoes, corn kernels, and vegetable broth. Stir well to combine.
  • Bring to a boil, then reduce heat to low. Cover and let simmer for 15-20 minutes.
  • Stir in the shredded cheddar cheese before serving.
